Recipe Yaniqueques (Fried crunchy tortillas)


The Dominican version of the Johnny cakes, this is an appetizer that you will find in Boca Chica beach, and can always buy from a street vendor. Make smaller versions and you'll have the perfect munchies.

Time: 20 Mins
Difficulty: Easy
Serve: 6 people

Before starting to cook: No prior preparation is required.

Ingredients:
  • 2 cups of all-purpose flour
  • 1/2 teaspoon of baking soda
  • 8 tablespoons of cold water
  • Salt
  • 2 cups of oil

Preparation:
  1. Mix the baking soda, a teaspoon of salt and flour. Pour water on the flour. Mix everything with your hands on a slightly floured surface until everything is well mixed, don't knead the dough (add some flour is it is too sticky or water if it is too dry). Let dough rest for ten minutes covered in plastic film. Extend until it is very thin, cut in circles and punch holes in it with a fork. If the circles are a bit mishapen don't worry, that's their usual shape.
  2. Fry in abundant oil until it turns golden brown. Sprinkle salt and leave on a paper towel for a minute before serving. Serve hot.

I have tried this and it's too much baking soda. With due respect, here is my version for the ingredients.

Ingredients:
2 cups all-purpose flour
A pinch of baking soda
3 tablespoons cold water
1 egg
1 tablespoon of butter
Salt to taste
Oil to fry

Talking Don't like it, then don't eat it!!!!!!!

I love it, I make then for my kids all the time and they love it too, it take
me back when I use to buy then in the corner of my aunt's house, early in the
morning, "The best breakfast in the world" hot and crispy and also when you go to the beach (Boca Chica) they have it there too..
So what can be better than that

Lightbulb Yaniqueques con queso?

Just wondering, I believe I've had yaniqueques filled with cheese, am I correct in thinking that there's a distinction between this and pastelitos with cheese? If so, could you (or anyone else) tell me how to add cheese and/or meat to your yaniqueque recipe? Thanx!
