But if you own an air fryer, it's almost sure that you are looking for recipes that require no deep frying but still retain the flavor of the original.

Air fryer tostones is the natural choice as a side dish with Chicharrón de pollo en freidora de aire, but you can also try this Air fryer potato recipe on my other blog. You can garnish it with some lime wedges, and serve with some Wasakaka sauce to dip the tostones too.
Serve alongside your preferred fría (frosted-cold beer), a mabí (Dominican fermented drink), a Jugo de chinola, a Morir soñando de chinola, or a Guarapo de piña.
Top tips
- Servings: As an appetizer, I found that this recipe was sufficient for 4 people (see photos for an idea), for a full meal, you may have to double it, but you will also probably need to cook in two batches.
- Spacing: Do not overcrowd the basket, there's need to be some space between each piece of meat so they cook evenly and for maximum crispiness. My 6 quart [6 liter] air fryer only fit two deboned chicken legs.
- Lining the air fryer: You can line the bottom of the air fryer (not the basket, just the base where the basket sits) with aluminum foil or parchment paper for easier cleaning later, as there'll be grease buildup left after cooking. I found that we need some holes to drain the liquid released by the chicken at the bottom or the meat will just boil.
- Cooking time: I have extensive cooking times for air fryer chicken in my other blog, but for this I found that 395 ºF [200 ºC] for 15-20 minutes was sufficient. For better results, use a meat thermometer to check for doneness or keep an eye on them so they don't burn or get undercooked.
- Cook in the oven: If you don't have an air fryer, you can cook this in the oven using the same instructtions. You'll just need more time to preheat the oven (about 30 minutes), and you'll also need a tray with a wire rack so the chicken doesn't sit in its juices.
- Turning: Unlike my other air fryer recipes, for this recipe turning the meat mid-way is not required, which saves a bit of work and produces crispier meat.
- Chicken skin: What makes this a chicharrón de pollo is the skin, and it should be as crispy as possible. Don't worry about the excess fat, as it will be rendered from the meat in the cooking, leaving just a crispy chicken crackling.
About this recipe
I already had instructions on how to cook Chicharrón de pollo on an air fryer as an extra in the traditional recipe, but I do keep testing my recipes, and sometimes come up with something better.
This is one case.
The previous one was fine, but the chicharrones were too pale for my taste (Dominicans do not like pale chicken). So I tested by adding either paprika and bija to add taste and color to it (something I had already done in another recipe). It works wonderfully, as you can see in the photos.

Air Fryer Chicharrón de Pollo [Video+Recipe] Crispy Chicken Bites
Ingredients
- 2 skin-on chicken leg quarters
- 3 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon pepper (freshly-cracked, or ground)
- 2 teaspoon sweet paprika, or bija powder
- 2 teaspoon salt
- ¼ cup all-purpose flour
Instructions
1. Ready chicken
- Remove meat from bones. Cut chicken into small pieces that you could eat in one or two bites. Leave the skin on the chicken. 💡 You can use the leftover bones and parts to make chicken broth.
2. Season chicken
- In a mixing bowl, season the chicken with Worcestershire sauce, salt, pepper, garlic powder, and paprika or bija. Mix well to coat the chicken with the seasonings.Cover and let it rest for half an hour.Sprinkle the flour, trying to coat the chicken evenly with it. Stir to mix in.
3. Preheat air fryer
- Preheat the air fryer to 400 ºF [200 ºC] for about 5 minutes.

- Reduce the temperature to 365°F [185°C] and cook for 15-20 minutes, or until they are golden brown, the skin is crispy, and they are fully cooked through.⚠️ The first time around they stuck to the bottom a bit, which was mostly solved by coating the bottom with a bit of sprayed oil or using a liner.
4. Serve
- Serve right out of the air fryer for maximum crispiness.
