If you're looking for a very Dominican appetizer or snack, but are keeping an eye on your waist -- or hate cleanup after frying as much as I do -- I have this Air frier longaniza recipe for you. Pair it with Air fryer tostones and serve a light Picalonga to surprise guests.

Why we ❤️ it

Fried longaniza with tostones, or Picalonga as we call the combination, is a typical roadside stop snack, and it has all the hallmarks of great roadside food: tasty, greasy, and filling.

This one manages to have all the flavor, but with much fewer calories. This will probably make your guests and your doctor happier.

Air fryer in Dominican cooking

Dominicans are not inmune to the air fryer craze of late years. Most people around me seem to have one, so while this is not a traditional method, culture evolves. Just like we make our Arepa in an oven nowadays -- as few people can make it the traditional way at home -- it's fine to experiment as long as we remember how to make it the old ways.

Serving suggestions

Air fryer tostones is the perfect pair for this recipe (Air fryer picalonga!), and while this is not typically served with a dipping sauce, you can make our flavorful Wasakaka or a Salsa rosada to serve with it.

Serve alongside your preferred fría (frosted-cold beer), a mabí (Dominican fermented drink), a Jugo de chinola, or a Guarapo de piña.

Top tips

  • Servings: As an appetizer, I found that 2 pounds [0.9 kilogram] of longaniza was sufficient for 4 people (see photos for an idea). I served it with 2 plantains made into Air fryer tostones. You can double the amounts if you want to serve it as a meal. You'll probably need to cook in two of more batches if you double it.
  • Spacing: Do not overcrowd the basket, there's need to be some space between each piece of longaniza so they cook evenly. Depending on the size of your air fryer, you may need to cook in two batches. My air fryer would only fit 1 pound [0.45 kilo] of longaniza at a time.
  • Lining the air fryer: You can line the bottom of the air fryer (not the basket, just the base where the basket sits) with aluminum foil or parchment paper for easier cleaning later, as there'll be grease buildup left after cooking.
  • Cooking time: Cooking time will depend on the type of longaniza you'll use. For this recipe I prefer raw longaniza, as it is juicier and more flavorful in my opinion.
  • Oven longaniza: No air fryer? No problem, there's instructions in the recipe to make it in an oven. You'll need a tray with a wire rack so the longaniza doesn't sit in its juices.

About this recipe

Keep in mind that air frying longaniza will not yield the exact same flavor and texture of the fried one; it will, however, be a reasonably close approximation, and an equally enjoyable dish.

I do suggest serving with a dipping sauce if you find the tostones a bit on the dry side (I liked them as is, but did serve with a Mayo-ketchup sauce for my family

Ingredients

  • 2 pound longaniza, [0.91 kg]
  • 2 limes, (cut into wedges, for garnishing)

Instructions
 

1. Preheating air fryer (or oven)

  • Preheating air fryer.
    Preheat the air fryer (or oven) to 350 ºF [175ºC].
    ⚠️ If yours is not a convection oven (that has an internal fan blowing during cooking) increase the temperature to 400 ºF [210 ºC].

2. Chopping the longaniza

  • Cut the longaniza into bite-sized pieces (about 1½ inches [4-5 centimeters].

3. Cooking

  • Longaniza in air fryer basket.
    - To cook in the air fryer:
    Place the longaniza pieces in the air fryer bowl without overcrowding. Cook for 10 minutes, then rotate them to cook evenly.
    Cook for 5 to 10 more minutes, or until they turn a golden-brown color and when one is cut, it is cooked in the center.
    ⚠️ You may need to cook in two batches if you can't fit all the longaniza on the basket without piling. The photo shows 1 pound [0.45 kilo] in the basket of my air fryer.
    - To cook in the oven:
    Place the meat on a wire rack, skin-side up. Cook for 15 to 20 minutes, or until they turn a golden-brown color.
    ⚠️ If your oven doesn't have a fan, you may need rotate them halfway through the cooking to cook them more evenly.

4. Serving

  • Air fryer longaniza (air fryer picalonga).
    Remove from the oven and serve while still hot with tostones (classic, or air fried) and garnish with lime wedges (to drizzle with juice to taste).
