These mangú (plantain) breakfast bites are just incredible, juicy, smooth, and pretty enough to be served in a refined manner. The only problem might be having to elbow your way to the buffet table before there are none left.
After all, we are a people that are crazy about plantains.
Dominican brunch ideas
Brunch has become popular when we get together, but it's not a traditional meal; however, if you're in the mood for something old-fashioned, nothing like Dominican mangú, served with Los Tres Golpes (throw in some avocado too) and you'll have the quintessential Dominican plantain breakfast.

A Dominican breakfast is not complete without one of our beloved breakfast hot drinks, but you can also serve it with one of our fruit juices.

Top tips
- Size: If you are asking yourself why I didn't make them bigger, I tried, but this is the only size that worked. They don't break and remain smooth and juicy inside.
- Garnish: Optionally you can garnish with chives, which give a nice green touch to the already colorful bites. Another option is topping with small slices of avocado.
- Ham: I used ham because I liked the combination better, but you can also use Dominican salami.
- Cheese: For this dish, I used Gouda, but you can use any other cheese that melts.
About this recipe
Every time I make Mangú at home we can't hide her excitement. We might be a half-family, but we're also 100% Dominican. I even make it for lunch sometimes, and always have to control my urge to lick the plate clean.
I made this dish for our friends-get-togethers, and it's always a great success for "fiestas de traje" (potlucks).
It may not be a traditional Dominican dish, but every element is taken from our traditions.

Plantain Bites [Video+Recipe] for Brunch or Fiesta
Equipment
Ingredients
For the mangú
- 2 plantain (green, unripe), peeled and cut into quarters
- 2 teaspoon salt
- 5 tablespoons butter, or vegetable oil
- 1 tablespoon onion powder
- 2 tablespoon vegetable oil, for greasing mold
For the filling
- 2 egg (large)
- 2 ounces York ham, [0.06 kg] cut into tiny cubes
- ½ red bell pepper, cut into tiny cubes
- 1 teaspoon salt
- ½ teaspoon pepper , (freshly-cracked, or ground)
- ½ tablespoon onion powder
- 2 ounces gouda, [0.06 kg] or cheddar cheese cut into tiny cubes
Instructions
1. Boil plantains
- Peel the plantains and cut them into pieces. Place them in a pot with enough water to cover them, and add the salt.Boil them until the plantains are very soft (15–20 mins).
2. Mash plantains
- Mash the plantain with a fork until you have a smooth puree with no lumps. If it's too dry, add a couple of tablespoons of water.Add the onion powder and butter, and mash to combine.⚠️ It shouldn't be too dry or too shaggy, and should keep its shape if you make a ball.Set aside for a moment.
3. Preheat oven
- Heat oven at maximum temperature.Grease a mini-muffin mold with the rest of the oil.
5. Form the cups
- Once the plantain has cooled down, scoop two tablespoons of the mixture and place into a mold.Press down with a pestle or the handle of another kitchen utensil to form a small cup. Repeat with the rest of the plantain.
6. Mix eggs
- Whisk the egg and mix in tomato, ham, salt, pepper, and onion powder.
7. Stuffing
- Place a cheese cube into each plantain cup.Fill them with the egg mixture.
8. Bake
- Bake until the eggs have set. Remove from the oven, and let it rest for a couple of minutes.
9. Serving
- Use a skewer to help you unmold them.Serve warm.
