Why we ❤️ it
Tostones (fried plantains) are one of the dishes that should definitely be on the list of the ten most popular dishes in our country. But if you want to try Tostones de guineo, or fried green banana, for a change, you'll find that they have their own charm, a more delicate flavor, and stay fresh longer.
Plantain vs guineo
We've already explained why Dominicans (and many other Latin Americans) call bananas "guineos". Green banana are commonly used in our savory dishes.
Although they belong to the same family and have similar flavors, green guineos and green plantains have different consistencies when cooked; plantains are firmer and contain more starch.
Plantains are larger and are never eaten raw. Guineos are cooked when they are green and can be eaten raw when ripe.

Serving suggestions
Aside from serving it with our traditional Dominican lunch, you can also serve these as appetizers with a sauce, I recommend mayo-ketchup sauce, wasakaka sauce, avocado dip, or cream cheese and chicken dip.
Top tips
- Peeling plantains: One difference between plantain and green bananas is that the latter tends to stain your hands much more when peeling them. I suggest rubbing oil on your hands before peeling them, wearing gloves (which isn't my preference since it's not very eco-friendly), or cutting and peeling them while submerged in a pot of water.
To make tostones, the easiest way to peel them is to slice them and peel the slices separately (as I show in the video). But you can do it however you're used to. - Reheating: Unlike classic tostones, guineo tostones can be reheated, but the trick is to do it in a dry skillet until they become crispy again; you can also reheat them in the oven or in an air fryer.
- Servings: From two green bananas, I get 16 tostones in total, enough for four servings of 4 tostones per person. If you want more, you can add more plantains.

Tostones de Guineo [Video+Recipe] Fried Green Banana
Ingredients
- 2 green bananas
- 1½ cup vegetable oil, with a high smoke point, like peanut, corn or canola oil
- ⅓ teaspoon salt, (or more, to taste)
Instructions
1. Peel the bananas
Cut each banana into 8 slices and peel the bananas with a paring knife (see recipe notes).
2. Fry bananas
In a saucepan, heat the oil over medium heat. Fry the plantains until they are light golden brown, turning them to cook evenly (about 5 minutes).Remove them from the oil (leave the oil on the heat).
3 Aplastar tostones
Flatten the fried slices to a thickness of about ¼ inch [0.5 centimeters].You can use a tostonera press, if you have one, though I use the bottom of a coffee mug.
4. Freír de nuevo
Fry them again until they are golden brown on both sides (about 5 minutes).
5. Serving
Sprinkle with salt and serve.
