Why we ❤️ it
No Dominican can resist some Fritos maduros for lunch, a sweet treat that we serve alongside our savory lunch meal, but they can be on the heavy side for those keeping a tab on their calories, so these air fried sweet plantains are just what you needed to let you enjoy them without guilt.
Are they any good?
They absolutely are, with a couple of tricks, they can be as juicy and soft as the fried ones, but with much fewer calories and much less cleanup afterwards.

Serving suggestions
Just as plátanos maduros fritos this is best served as a side dish for lunch. It is perfect with La Bandera Dominicana (our traditional lunch of Dominican rice, Dominican beans, and Carne de res guisada or Pollo guisado),
Its also great with any of our locrios (and Locrio de chicharrones de cerdo and Locrio de arenque are not the same for me without their sweet touch).
Top tips
- Ripeness: For this dish, it's best to use very ripe plantains when the skin has turned completely black and they are a bit mushy (like the ones used for Plátano pasados o al caldero).
I tried them aslo with half-black ones and they were just not as good. The reason for this is that they will lose water in the air fryer and turn firmer and a bit dry. - Salt: If you are serving them as an appetizer -which I did!, try sprinkling them with coarse salt or salt for a lovely contrast in taste and texture.
About this recipe
Some would think there's no reason to mess with a classic, but trust me, I am now a convert. I love the traditional fritos maduros, but I do hate frying and the mess it leaves, so these are my new favorite.
And I now have something else to make with those almost gone plantains. We couldn't leave these out of our air fryer recipes.

Air Fryer Fritos Maduros [Video+Recipe] Sweet Plantains
Ingredients
- 2 plantain (very ripe), (the peel should be black)
- 2 tablespoons olive oil
Instructions
1. Readying the plantains
- Peel the plantains (it's just like peeling a banana).Cut into diagonal slices into about ¼ inch inch (0.5 centimeter).
- Lightly brush the plantains on both sides with the oil.
2. Frying
- Cook the plantain in the air fryer heated to 390 ºC [200 ºC] for five minutes (or until they have turned golden brown.Flip them and cook for another 5 minutes, or until they turn golden brown on that side.
3. Serving
- Serve them while still hot.
