Why we ❤️ it
Arroz con leche or Arroz con dulce is one of the most popular Dominican desserts, but this version with no added sugar is a savory porridge typically served as a light dinner, breakfast, or comfort food for kids or when someone's stomach is upset.
Arroz con leche salado o amargo
Arroz con leche salado or arroz con leche amargo (it's not bitter, "amargo" also means unsweetened in Spanish) is a version of this dish traditionally served as dinner, sometimes prepared with leftover arroz blanco (white rice). See our recipe for Rice Pudding with Leftover Rice.
It's perfect for kids on school days and for those days when we want to give our stomachs a break.

Serving suggestions
In the Dominican Republic, we serve as a schoolday breakfast or as a light dinner.
I like to serve it alongside one of our hot breakfast drinks.
Top tips
- Rice: For this recipe, we use long-grain rice (Carolina), which is the one traditionally used in the Dominican Republic.
- Consistency: The consistency of this dish depends on the cook's preference; remember that it also thickens as it cools.
- Temperature: This dish is typically served hot or at room temperature. You can serve it at whatever temperature you prefer.
- Storing and reheating: You can store leftovers in the refrigerator and add a few tablespoons of milk before reheating in the microwave or on the stovetop, as it will likely be very thick once it cools.
- Flavors: For this dish, I use some lemon zest and serve it with a pinch of nutmeg. You can try other spices if you'd like to experiment a bit.
- Vegan version: You can make it with your favorite milk substitute and omit the butter. Keep in mind that the flavor will change with these substitutions.
About our recipe
My mother used to make the sugarless version often. Bear in mind that this is an acquired taste - that I never acquired myself as a child.
If you want to give it a try and enjoy this delicious breakfast porridge, which is also lighter than the dessert version, here's Mami's recipe.

Arroz con Leche Salado - Recipe Sugar-free Rice Porridge
Ingredients
- 1 cup rice
- 1 teaspoon salt
- Piece lime rind
- 3 cup evaporated milk
- 2 tablespoons salted butter
- ⅛ teaspoon nutmeg (freshly-grated)
Instructions
1. Combine
- Pour the 6 cups of water into a large pot (1 galon [4 liters]), add the rice, the lemon rind, and the salt.⚠️ Do not rinse the rice; you need all the starch to thicken the mixture.
2. Simmer
- Cook the rice over medium-low heat until it softens. Stir regularly to prevent it from sticking to the bottom and burning. When the rice is soft and the grains have doubled in size, add the milk and cook, stirring frequently to prevent it from sticking. When it reaches your preferred consistency, remove from the heat.
3. Serve
- Remove the lemon peel. Add the butter and mix well. Serve in bowls or deep dishes and sprinkle with a pinch of grated nutmeg.
