Ingredients

1 cup rice
1 teaspoon salt
Piece lime rind
3 cup evaporated milk
2 tablespoons salted butter
⅛ teaspoon nutmeg (freshly-grated)

Instructions

1. Combine

Pour the 6 cups of water into a large pot (1 galon [4 liters]), add the rice, the lemon rind, and the salt.
⚠️ Do not rinse the rice; you need all the starch to thicken the mixture.

2. Simmer

Cook the rice over medium-low heat until it softens. Stir regularly to prevent it from sticking to the bottom and burning.
When the rice is soft and the grains have doubled in size, add the milk and cook, stirring frequently to prevent it from sticking.
When it reaches your preferred consistency, remove from the heat.

3. Serve

Remove the lemon peel. Add the butter and mix well.
Serve in bowls or deep dishes and sprinkle with a pinch of grated nutmeg.
