Why we ❤️ it

Mofongo is one of the most popular plantain recipes in our collection.

There's so much to love about this dish-its texture, its umami flavor, and that hint of garlic we so love-and this recipe makes it easier, lighter, and without having to clean up oil splatters.

Cooking with air fryer

This is one of many air fryer recipes we've posted; in fact, we have several traditional criollo dishes that we've adapted for this ubiquitous cooking method, which has also become very popular in our country.

Serving suggestions

You can serve it with my Homemade beef broth, but you can also serve it with Chicken broth. Or, for a vegan mofongo, omit the pork rinds and serve it with my Vegetable broth.

I've served it with a portion of Air fryer chicharrón, but you can also serve it with Air fryer longaniza.

You can serve it with Camarones guisados shrimp or Pollo guisado chicken with plenty of sauce, instead of serving with broth. Another great combination is to serve it with Res ripiada beef, a Dominican dish similar to Cuban ropa vieja.

Drinks are a must-have to help "wash down" the mofongo, 😉 and a fría always goes well with this meal; one of our juices would also be a great choice-I love it with Pineapple guarapo or Passion fruit juice.

Top tips

  • Chicharrón: If you want to make pork chicharrón from scratch, follow the instructions and watch the video for this recipe; we also have a recipe for Chicharrón made in an air fryer.
  • Making it in the oven: Although the recipe is designed for an air fryer, you can also make it in the oven by following the Dominican mofongo included in this recipe.
  • Add oil: Although this recipe is much lighter than fried mofongo, you can't make it without adding oil, since plantains are quite dry. I've solved this by adding olive oil, which makes it healthier, and you can control how much oil to add to your liking.
  • Meatless version: You can easily make this without adding the chicharrón to the mofongo and serve it with a vegan broth. It will lose a bit of the traditional flavor and texture, but it worked well for me, too.
  • Cook in batches: Depending on the size of your air fryer, you'll have to cook it in batches; mine only fits two plantains for two servings. 😔 However, this works out well for me now that it's just my husband and me at home.

About this recipe

This dish is inspired by the traditional Dominican mofongo, which was made by roasting plantains instead of frying them (similar to Batata asada roasted sweet potatoes).

Fried mofongo is, however, the most popular version in our country, but there are a couple of things that many people don't like about it: it's a fairly high-calorie dish, and frying requires a lot of extra cleanup afterward.

With this dish, we solve both of these problems by reducing the calorie content of the mofongo and making it easier and more convenient to prepare.

I've made this recipe several times at home, and it's always been a hit.

Air Fryer Mofongo [Video+Recipe] Light and Tasty

Learn how to make mofongo a very tasty plantain mash with pork and garlic mixed in that will become your new favorite.

Ingredients

  • 4 plantain (green, unripe), unpeeled
  • ⅓ cup olive oil, (optional)
  • 1½ teaspoon salt
  • 4 garlic cloves, mashed (about 2 tablespoons)
  • 1 1 air fried chicharron , (fried pork skin) minced

Instructions
 

1. Cook the plantains (1st time)

  • Air frying plantains.
    Bake the unpeeled plantains in an air fryer preheated to 165ºC [330ºF] for 10 minutes. Flip them over and cook for 10 more minutes.
    💡 If you don’t have an air fryer, you can bake them in an oven preheated to the same temperature.

2. Peel and chop

  • Chopping plantains.
    Immediately after removing them from the air fryer, peel the plantains while they're still hot. Chop the plantains into irregular wedges.
    💡 Use kitchen tongs to help you, being careful not to burn yourself.
    Place the chopped plantains in a bowl, drizzle with half the olive oil and all the salt.
    ⚠️ Cutting them this way will make the edges crispy, mimicking the texture of fried plantains.

3. Cook the plantains (2nd time)

  • Place the plantains in the air fryer basket lined with parchment paper and spread them out evenly without stacking them.
    Cook in the preheated air fryer at 200ºC [400ºF] for 5 minutes. Flip them over and cook for another 5 minutes.

4. Mash

  • Mashing plantains.
    Place the plantains in a mortar (Amazon affiliate link) along with the chicharrón and garlic. Mash until combined into a ball with a dense consistency, but with the plantain pieces still separate (see photos).
    Taste and add more oil if it’s too dry.
    💡 You may need to do this in batches so it all fits in the mortar.

5. Serve

  • Form 4 balls of mofongo and serve in wooden bowls or whatever you have on hand.
    Serve the mofongo with hot beef broth (see serving suggestions above the recipe).
