Why we ❤️ it

These may not be the most sophisticated picadera (appetizer) in our collection, but it is the easiest, quickest and most accessible.

You can make it with fancy cheeses and ham, or with inexpensive local cheese and Dominican salami.

What's sanduchitos

Sanduchitos is how most of us Dominicans call these sandwichitos, the bite-sized, tasty but inexpensive mini-sandwiches that are served as a snack or appetizer in our country.

Serving suggestions

To assemble a complete Dominican picadera platter (hors d'oeuvre tray), serve these with Quipes (bulgur fritters), Croquetas (croquettes), Pastelitos and Empanaditas.

If you want to serve some more mini-sandwiches try some Avocado and egg triples sanwiches, these Cucumber sandwiches and these lovely finger foods that include another mini sandwhich.

Top tips

  • Cheese(s): Traditionally this was made with queso geo -a kind of hard cheese Dominican gouda that is bright orange- or queso picantino -the local version of peccorino. You can use either gouda, or peccorino instead. The color of the paste will change depending on the cheese you use.
  • Ham: The most humble version is made with salami or inexpensive york ham. I used york ham. The color of the paste will change depending on the ham you use.
  • Bread: For these you need white sandwich bread. You can buy the crustless one to save a couple of minutes. 😉
  • Food processor: For this recipe I didn't need a food processor because I used a box grater (just like they made it in the old days), but if you have a food processor you can save yourself a couple of minutes by using it.
  • Other ingredients: If you use a food processor, you can add a few chunks of red bell pepper for extra flavor and color, or a couple of sprigs of parsley, or a couple of sprigs of chives. None of these are part of the traditional recipe, but improve the flavor.

    Instead of york ham, you can go with lighter alternatives like turkey or chicken ham.
  • With shrimp: Check out the recipe for the sandwichon if you're interested in making some with shrimp filling.

About our recipe

You can find these tasty mini-sandwiches in our picadera platter for every occasion, but I first encountered a similar concept at every "hora santa" I was dragged to by my mom as a kid. At least did get a tasty snack and a drink for my troubles.

For horas santas (an hour of prayer for Catholics) it was typically served without cutting into quarters, but for as an appetizer it is cut into quarters or halves.

Make these Sanduchitos (or Sandwichitos), the easiest quickest and most inexpensive appetizer in our cuisine.

Ingredients

  • 12 slices sandwich bread
  • 8 ounces Gouda cheese, [220 grams]
  • 10 ounces york ham, [300 grams]
  • ¼ cup butter, at room temperature

Instructions
 

1. Cut bread crust

  • Cutting crust of bread.
    Cut the bread crust with a bread knife.

2. Make filling

  • Making mezcla filling.
    Grate cheese and ham with the fine side of a box grater.
    Combine with butter and mix well.

3. Layer

  • Spreading mezcla on bread.
    Spread the filling in equal amounts on half of the bread. Top with the remaining slices.

4. Cut

  • Cutting sandwichitos.
    Cut each sandwich into 4 triangles, or 4 small squares.

5. Serve

  • Sanduchitos or sandwichitos.
    Serve immediately, or refrigerate covered with saran wrap until served.
    Take out of the fridge about 10 minutes before serving for the filling to soften again.
