Salads are an important part of the Dominican meal. Sometimes instead of (or in addition to) salad Dominicans serve side dishes with their meals . Casseroles (pastelones) are also very popular in Dominican cuisine.

Recipe Tostones (Flattened fried plantains)


Tostones is, without doubt, Dominican's favorite side dish and to make them even more delicious and tender I have added my own touch, until now a well- guarded family secret.

Time: 15 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: No prior preparation is necessary.

Ingredients:
  • 2 unripe plantains
  • 1/2 cup of oil
  • 4 teaspoons of cold water
  • 1/2 teaspoons of mashed garlic
  • Salt

Preparation:
  1. Peel the plantains and cut into 1 inch thick slices. In a deep frying pan heat the oil and fry the plantains till golden brown. Flatten the plantains using the bottom of a flat-bottomed glass bottle. Fry the plantains again for 30 seconds on each side.
  2. (This part is optional) Mix the water, a pinch of salt and the mashed garlic. Stir and pour over the plantains.
  3. Serve immediately.

Good companion

Yummy I love tostones...My parents have this special companion for the tosotones and it is beef in stripes with onion and aji, it's very good, and with some ketchup!!!
