If you love mofongo --and who doesn't?-- you will scream with joy when you try this camarofongo (mofongo stuffed with shrimp). It's my favorite mofongo.

Why we ❤️ it

So you want to learn how to make mofongo with shrimp Dominican style? Great! Here I bring you a camarofongo: a shrimp mofongo. It is as good as the traditional mofongo, and although it is not exactly the mofongo with chicharrón, this is a wonderful version, with the rich sauce of stewed shrimp, combined with the rich flavor of garlic.

To serve it you can make the typical mofongo ball surrounded by shrimp, or make it following the shape of the bowl, and serve the mofongo stuffed with garlic shrimp or stewed shrimp.

Shrimp

For this recipe I have used camarones guisado, the abundant sauce goes very well with the mofongo, which needs some broth or sauce because it is a little dry. You can also use the garlic shrimp (camarones al ajillo) recipe, and serve with a little broth.

About this recipe

This is a very popular version of mofongo in our country, and a favorite of both Tia Ilana and myself.

Learn how to make shrimp mofongo, or camarofongo, a tasty combination of mofongo with rich and juicy stewed shrimp.

Ingredients

  • 1 cup oil for frying
  • 4 green plantains, peeled and cut into ¾" [2.5 cm] slices
  • 2 tablespoons minced garlic
  • 2 teaspoons salt

The shrimps

  • Stewed Shrimps , (See our recipe).

Instructions
 

1. Frying plantains

  • Heat oil over medium heat and fry plantains until golden brown on all sides (3-5 mins).
    Remove from oil and place on a paper towel.

2. Sautéing garlic

  • Take 3 tablespoons of the oil, and heat over low heat in a skillet. Add the garlic and salt and cook, stirring for a couple of minutes, until the garlic is heated through.
    Remove from the heat.

3. Mashing the plantains

  • Add the plantains with the garlic and the oil in which the garlic was cooked using a pilón (Amazon affiliate link) and mash to a puree (possibly divided into portions to fit in the pestle).

4. Serving

  • Form 6 balls with the plantain and chicharrones mixture and place them in small bowls or plates.
    Serve with the stewed shrimp.
