Revoltillo de huevos - Huevos revueltos a la Dominicana - it's a simple and flavorful dish of scrambled eggs that are quick and simple to cook. Nutritious, and vegetable-laden, it adds a new dimension to breakfast, and it's the perfect dish for a weekend breakfast or brunch.

Why we ❤️ it

These huevos revueltos a la dominicana, can be a part of the perfect meal to start the day. Breakfast in the Dominican Republic can be as simple or as complex as it comes. From a simple cup of "café con leche" (latte) to Los Tres Golpes with all the fittings, we have much to offer for the day's first meal.

Revoltillo de huevos is also a versatile dish that we can adapt to our tastes.

What's revoltillo de huevo?

Revoltillo is a Spanish word meaning a scramble or disorganized mixture. In the Dominican Republic a revoltillo de huevo - or revoltillo for short - is a dish with scrambled eggs, vegetables, and sometimes meat products, like ham or salami.

Each family has their own preferred mixture of ingredients in these huevos revueltos.

Serving suggestions

You can pair this dish with boiled "víveres" (yuca, batata, yautía, or auyama), or Pan de agua, Pan de agua, orn Mangú. It also goes great with Casabe.

Some of our breakfast hot drinks are highly recommended: Chocolate de maíz (cornmeal cocoa) and Chocolate de maní (peanut cocoa) were always served with revoltillo in my paternal home.

Top tips

  • Change ingredients: You can get creative and add or substitute vegetables you like. Though not a traditional ingredient, I sometimes like to add minced mushrooms to mine.
  • Meat products: You can add diced ham or salami by browning them in the hot oil before cooking the vegetables in step 1.

About this recipe

This version of revoltillo was my mom's favorite combination and was made with the most common vegetables.

Ingredients

  • 2 tablespoons olive oil
  • ¾ cup diced tomato
  • 1 bell pepper, , cut into small cubes
  • 1 large red onion, , cut into small cubes
  • 8 egg, (medium)
  • 1 teaspoon salt, , or to taste
  • ½ teaspoon pepper , (freshly-cracked, or ground), or more, to taste
  • 1 tablespoon minced parsley, (optional)

Instructions
 

1. Cook vegetables

  • How to make Revoltillo de Huevos
    Cook vegetables: Heat a tablespoon of oil in a large skillet over medium heat.
    Add tomato, bell pepper, onion, and cook and stir until the vegetables are cooked through.

2. Cook eggs

  • Cook eggs
    Add the eggs, stir until the eggs set. Season with salt and pepper to taste. Garnish with parsley.

3. Serving

  • Serving
    Remove from the heat and serve.
