This Tortilla de huevo - a lovely vegetable omelet - is basically lots of vegetables thrown together in an easy and filling breakfast. This simple-yet-flavorful Dominican omelet is one of our best dishes for weekend breakfasts and brunches, and one of our family's favorites.

Why we ❤️ it

This tortilla is basically a whole lot of vegetables thrown together and held by the egg and flour mixture. Feel free to add whatever vegetables you like best or can find in a pinch.

Surprise your family and guests with one of my family's classics, and it'll soon be one of your family's favorites too.

What's tortilla?

As Shakespeare would say: what's in a name?

For many people around the globe, especially those who do not speak Spanish, tortillas are the corn-based thin flatbread that Mexicans have popularized the world over. For Spanish speakers, tortilla (de patata) is a thick Spanish omelet containing potatoes and other ingredients.

Many of us Dominicans grew up with yet another version of tortillas, an omelet containing flour instead of potatoes.

If only we Hispanic people would agree to speak the same language.

Serving suggestions

My mom would serve it with Boiled yuca, some slices of avocado, and some Hot cocoa. It also goes great with Pan de agua, or toasted Pan Sobao (both Dominican breads).

I love it with a just a warm cup of Chocolate de agua or a steaming cup of Café con leche (Dominican latte).

Top tips

  • Baked: To make it in the oven, just oil the pan (I like individual serving ones, but use what you have), arrange your vegetables in it, pour the egg mixture, and pop in the preheated oven at 200 ºF [100 ºC] until eggs have set and it is light-golden on top (you can poke it with a toothpick to check for doneness).
  • More vegetables: Other candidates are broccoli, asparagus (not that it is popular in the Dominican Republic, but who cares?), and even finely sliced carrots.
  • Meat: If you feel the need for a heartier breakfast, sautee some sliced (cooked) sausages or a top the omelet with grated cheese of your choice.
  • Flour substitute: For a gluten-free option, use two tablespoons of cornstarch instead of flour. Bear in mind that the consistency will be slightly different.

About this recipe

This was a very popular weekend breakfast dish at my parents' home. Although the main concept remained the same, ingredients varied depending on what could be found in our fridge.

If you feel like saving yourself some extra calories, you can go with my personal favorite: pour all the ingredients into a baking pan and pop in the oven. It gets very fluffy and light, a bit souffle-like. Just make sure to use a non-stick pan for easy cleaning.

Ingredients

  • 6 egg (medium)
  • ½ cup milk (whole or skim)
  • ¾ teaspoon salt
  • ¼ teaspoon pepper (freshly-cracked, or ground)
  • 4 tablespoons all-purpose flour, sifted
  • 4 tablespoons olive oil
  • 1 red onion, cut into strips
  • 2 bell pepper, cut into strips
  • ½ cup pitted green olives, sliced (optional)
  • ½ cup cherry tomato, halved, or large tomatoes diced

Instructions
 

1. Mix

  • Whisking the batter.
    In a mixing bowl, combine eggs, milk, and salt and pepper.
    Add in flour to the eggs and whisk until it is well mixed and whisk to mix well

2. Cook the vegetables

  • Pouring the batter.
    In a frying pan heat up the oil.
    Cook and stir the onion until it becomes translucent. Add peppers, tomato, and olives and cook until they have heated through. Arrange the vegetables to cover the bottom of the pan. Pour in the batter.

3. Cook egg batter

  • Cooking covered.
    Lower the heat to very low and cover with a tight-fitting lid.
    Cook until eggs set, about 10-15 minutes. Check with a knife or toothpick for doneness by poking in the center.

4. Serve

  • Tortilla de huevo (vegetable omelette).
    Remove from the heat and flip onto a large plate or tray.

Cook's Notes

If you add more vegetables, add the longer-cooking vegetables first so the other ones don't overcook.
