Plantain Bites for Breakfast

Based on our most popular Dominican breakfast dish, I have created these cute Los Tres Golpes-style Breakfast Plantain Bites that are perfect to serve at brunch or at a breakfast buffet. I love them and think it is one of my best non-traditional plantain breakfast recipes.

Why we ❤️ it

These mangú (plantain) breakfast bites are just incredible, juicy, smooth, and pretty enough to be served in a refined manner. The only problem might be having to elbow your way to the buffet table before there are none left.

After all, we are a people that are crazy about plantains.

Plantain breakfast ideas

If you want to go old-fashioned, nothing like Dominican mangú, served with Los Tres Golpes (throw in some avocado too) and you'll have the quintessential Dominican plantain breakfast.

It may surprise you that I suggest a soup, but yeah, many Dominicans love a soup for breakfast, and this Plantain soup is reputed to be able to restore us after a stomach ache, or a night of too much drinking.

If you feel like tasting another non traditional brunch dish, these Mofonguitos and this Plantain quiche might be just what you need.

Serving suggestions

A Dominican breakfast is not complete without one of our beloved breakfast hot drinks, but you can also serve it with one of our fruit juices.

Don't miss our Tortilla de huevo, and our Revoltillo de huevo as options to complete your breakfast.

Top tips

  • Size: If you are asking yourself why I didn't make them bigger, I tried, but this is the only size that worked. They don't break and remain smooth and juicy inside.
  • Chives: The chives give a nice green touch to the already colorful bites, without making the onion from our traditional breakfast taste too overwhelming.

About this recipe

Every time I make Mangú at home we can't hide her excitement. We might be a half-family, but we're also 100% Dominican. I even make it for lunch sometimes, and always have to control my urge to lick the plate clean.

I made this dish for our friends-get-togethers, and it's always a great success for "fiestas de traje" (potlucks).

It may not be a traditional Dominican dish, but every element is taken from our traditions.

Mangú (Plantain) Breakfast Bites Recipe: Based on our most popular breakfast dish, we've made these cute bites perfect to serve at a buffet. I love them!

Ingredients

For the mangú

  • 2 plantain (green, unripe), peeled and cut into quarters
  • 1 teaspoon salt
  • 5 tablespoons vegetable oil
  • 1 medium white onion , grated

For the filling

  • 1 egg (large)
  • 2 ounces York ham, [0.06 kg] cut into tiny cubes
  • 1 plum tomato, cut into tiny cubes
  • 1 tablespoon chopped chives
  • ½ teaspoon salt
  • ¼ teaspoon pepper , (freshly-cracked, or ground)
  • 2 ounces gouda, [0.06 kg] or cheddar cheese cut into tiny cubes

Instructions
 

1. Boil plantains

  • Boil the plantains in enough water to cover it, adding the salt to the water, until the plantains are very tender (about 15 mins). Remove from the water.

2. Mash plantains

  • Mash the plantains with a fork until it is a small puree with no lumps. Mix in a couple tablespoons of the water it boiled in if it's too dry.
    ⚠️ It shouldn't be too dry or too shaggy, and should keep its shape if you make a ball.
    Set aside for a moment.

3. Cook onions

  • Heat 3 tablespoons of oil over very low heat, stir in the onion. Cook stir until the onion starts to become translucent. Remove from the heat and mix with the mashed plantain. Allow it to cool to room temperature.

4. Preheat oven

  • Heat oven at maximum temperature.
    Grease a mini-muffin mold with the rest of the oil.

5. Form the cups

  • Once the plantain has cooled down, scoop two tablespoons of the mixture at a time and make into balls.
    Place the balls into mini-muffin molds and press to form the cups. Place a cheese cube into each cup.

6. Mix ingredients

  • Whisk the egg and mix in tomato, chives, ham, salt and pepper. Pour this mixture into each cup enough to fill them.

7. Bake

  • Bake until the eggs have set. Remove from the oven, and let it rest for a couple of minutes. Use a skewer to help you unmold them and serve warm.
