DOMINICAN AREPA (CORNMEAL AND COCONUT CAKE)

Arepa is a popular dish, and loved by all.  The ingredients are inexpensive, the cooking does not require great expertise, and it can be made with basic utensils.

Ingredients

Cornmeal | Butter | Whole Milk | Sugar | Coconut Milk | Salt | Cinnamon | Raisins

Greasing mold

Grease a baking pan (2 ½ quart) with butter.

Mixing

Mix butter, cornmeal, milk, coconut milk, salt, raisins, cinnamon, and sugar.

Cooking

Stir the batter with a spatula and pour into a 3 quart cooking pot and heat on the stove over medium heat, stirring constantly to avoid sticking.

Cooking

When it breaks the boil, lower the heat and continue stirring until it thickens enough.

Baking

Pour batter into the pan and bake for 40 minutes preheated oven to 350 ºF [175 ºC].

Serving

Let it cool down to room temperature before removing from the pan. Serve with hot cocoa or coffee.
