Okra fans rejoice, this Ensalada de molondrones - one of my favorite Dominican salad recipes - is an easy-to-prepare, and very healthful okra salad. Once you try it, you'll surely be convinced to add this lovely vegetable forward dish to your weekday Dominican lunch meal.

Why we ❤️ it
There doesn't seem to be anyone that is lukewarm in their opinion of okra, it's either like or intense dislike.
Regardless of your opinion of okra as a food, you have to admit ensalada de molondrones (Dominican okra salad) is a dish that looks good. It's also a nutritional, light, easy, inexpensive, filling dish that is good for you.
Dominican okra dishes
We have a few recipes that either contain some or are mostly based on okra. Okra (Abelmoschus esculentus) - known as molondrón, quimbombó and abelmosco throughout Latin America - is very easy to find in the Dominican Republic.

Serving suggestions
Ensalada de molondrones dominicana is a lovely salad to complete any Dominican lunch meal, and great all year round. I love it with the traditional Dominican rice, stewed beans basis for lunch.
And vegans will love that it makes a fantastic option instead of meat dishes.
Top tips
- Cutting sliminess: Adding vinegar to the boiling water will cut down on the sliminess typical of okra that so many people dislike. Don't skip that step/ingredient.
You can also use lime juice instead of vinegar, though the final flavor will be different. - Chopping ingredients: You can mince the other ingredients as I did, or cut them in pieces about the same size as the okra. I prefer the method I show here.
About this recipe
This is not a salad that is one of the most common or popular (see above for reasons), but if you a member of Team Molondrones, you'll love this. It's a colorful dish with all the flavors that we Dominicans love.

Ensalada de Molondrones [Video+Recipe] Okra Salad
Ingredients
- 3 tablespoons fruit vinegar, divided (apple cider vinegar works well)
- 1¼ tablespoon salt, (or more, to taste), divided
- 4 cup okra, cut into 1-inch [2.5 cm] slices
- 2 tablespoons olive oil
- 1 sprig parsley, minced
- 1 bell pepper, minced
- 1 large red onion, minced
- ¼ teaspoon pepper (freshly-cracked, or ground), (or more, to taste)
Instructions
1. Prepare water
- In a medium or large saucepan, add 1½ quart [1½ liter] of water. Add half of the vinegar and a tablespoon of salt.
2. Boiling okra
- Boil the okra over medium heat until they are cooked throughout but still firm enough to maintain its shape (about 12 minutes).
3. Cooling
- When the okra is cooked remove it from the heat and discard the water. Let it cool down to room temperature.
3. Making salad
- Mix half the okra, oil, parsley, bell pepper, and onion. Season with salt and pepper to taste.Set aside to rest for about 10 minutes.
5. Serving
- Serve the salad at room temperature, or refrigerate to serve later (some people prefer it chilled).
