Asopaos are some of my favorite Dominican stews. These are some of the most forgiving, easy to make and inexpensive dishes in our cuisine. Here are the most popular ones.

Dominican rice

Bowl of raw long-grain (Carolina) rice

To make Dominican asopaos you need to use long grain (Carolina) rice. It has less starch than short-grain rice, but more than Jasmin or Basmati.

What to serve with asopaos

Typically asopaos are served with a few slices of avocado, or Tostones. Some people love serving a sliced ripe banana with some asopaos.
