    Following our "How To" series, I am now going to show you the way to make perfect, with even texture, and homemade bread crumbs and homemade panko that you can use in all of our recipes that call for it, or any other recipe you'd like to prepare.

    It is also a great way to dispose of bread that would otherwise go to waste.

    What are bread crumbs?

    Bread crumbs are simply very small pieces or flakes of bread. The size and texture may vary from the ones bought at the store or made from scratch.

    What's bread crumbs in Spanish?

    In Spanish, bread crumbs are called pan rallado, migas de pan, or migajas de pan.

    What's the difference between panko and bread crumbs?

    Panko is best used for coating things that will be fried or baked, as it produces a crispier crust, bread crumbs are used commonly as an agglutinating agent in dishes like meatballs, meatloaves, etc.

    What is seasoned panko used for?

    This is my favorite way to add a dash of flavor and a crispy texture to casseroles, pasta, or whatever strikes your fancy. You can modify my basic recipe to add other herbs and spices to your taste.

    What is the best bread for breadcrumbs and panko?

    White sandwich bread is my favorite for making panko breadcrumbs.  It produces an even-colored and uniform texture.  French bread (baguettes), pan de agua can be used to make breadcrumbs. Pan sobao (as Dominican calls our breakfast white bread buns) is also a great type of bread for making breadcrumbs and, if we discard the crust, panko. You see in the recipe it is what I used.

    What is best, fresh bread or day-old bread?

    In my opinion, old (but not moldy or stale) bread produces the best breadcrumbs and panko. It has lost some of its humidity and it is easier to pulse in the food processor. 
    It's also more economical to use old bread instead of using perfectly fine bread for this, but yes, if you don't have day-old bread, go ahead, use fresh bread.

    Can you make panko and bread crumbs without food processor?

    Yes, breadcrumbs and panko can be made without a food processor, you can use a grater instead. No wonder it can be called "grated bread" in Spanish. The bread has to be very dry to be able to grate it. And to answer the question: No, a spice grinder or coffee blender does not work well with bread, in my experience.

    How do you store breadcrumbs and panko?

    The best way to store panko and breadcrumbs is to put them in an airtight container and refrigerate it. Panko has a longer shelf life on account of having less moisture, and toasting will kill some of the microorganisms that make bread moldy and stale. I prefer not to store it in the freezer as it changes the flavor and texture, in my experience.

    About this recipe

    Making bread crumb is no rocket surgery. In its most simple form, it can be roughly grated or pulsed in a food processor. However, the texture and type of bread used will change the flavor and consistency of the final product, and doing it right doesn't take that much more time and effort.

    If you feel adventurous, you can add other herbs and spices to the seasoned panko, some other good choices: Onion powder, dry rosemary, dry thyme, oregano, dry parsley, and even a bit of finely grated parmesan cheese.

    The recipe below will yield roughly 2 cups of breadcrumbs or panko, but you can just process all the bread you have, and store the rest for later use.

    Ingredients

    Plain breadcrumbs or panko

    • 4 cups diced white bread, [115 g], without crust to make panko

    Seasoned panko

    • 1½ teaspoon salt
    • 3 teaspoon garlic powder
    • 1 teaspoon pepper (freshly-cracked, or ground), substitute other dry herbs or spices for pepper if you wish, see notes above.
    • 4 tablespoons olive oil

    Instructions
     

    • Putting diced bread in food processor
      To make plain breadcrumbs: Grind the bread in the food processor. Sift with a sieve with large holes, and discard (or grind again) the big chunks.
      Put in an airtight container and use or refrigerate.
    • Sifting breadcrumbs
      To make plain panko: Grind the crustless bread in the food processor.
      Spread on a baking sheet and toast in the oven or toaster oven until light golden (5 minutes at mid-temperature in my toaster oven, your settings will depend on the oven or toaster you have).
      Sift with a sieve with large holes, and discard (or grind again) the big chunks. Put in an airtight container and use or refrigerate.
    • To make seasoned panko: Combine the crustless bread, salt, garlic powder, pepper, and olive oil in the food processor vase, and grind.
      Spread on a baking sheet and toast in the oven or toaster oven until light golden (5 minutes at mid-temperature in my toaster oven, your settings will depend on the oven or toaster you have).
      Sift with a sieve with large holes, and discard (or grind again) the big chunks. Put in an airtight container and use or refrigerate.
