The Dominican summer is not for cowards. Luckily, there are many ways to combat the heat without perishing.
Some of our favorite anti-heat weapons are popsicles and ice creams, and we have some traditional ones and others - like this one - inspired by other criollo desserts.
What's tres leches?
Tres leches is a spongy cake bathed in a sweet milk sauce. It is as popular in the Dominican Republic as in the rest of Latin America.
But baking it this time of year just doesn't go well with me. I've taken inspiration from this rich dessert to make a popsicle with similar flavors and textures. It's not a traditional recipe, but I'm sure any Dominican will love it.

Top tips
- Ladyfingers: For this dessert, using ladyfingers instead of sponge cake prevents the sponge cake from dissolving in the liquid, although they will become soggy, the ladyfingers have a better consistency.
- Ladyfingers substitute: If you do not have ladyfingers, you can use Maria cookies crushed a little.
- Xanthan gum: To obtain popsicles as creamy as those made industrially, you can add half a teaspoon of xanthan gum diluted in the evaporated milk before proceeding to step two.
About this recipe
These are amazing, just like the Tres Leches Cake, although I thought to call these "Two Leches", as they only contain two types of milk. I also did not use cake for two reasons: first, because the cake got very mushy and unpalatable in my first tests.
The second reason is that I figured, my readers would appreciate something simpler that they could make with the kids to say goodbye to summer and vacation. I used ladyfingers instead, and it worked fantastically. I hope you like them as much as my kid and I did.

Tres Leches Popsicles [Video+Recipe]
Equipment
Ingredients
- 1 cup heavy cream
- 1 cup evaporated milk
- 1 tablespoon clear vanilla extract
- ¼ tablespoons condensed milk, or to taste
- 6 ladyfingers
Instructions
1. Mix
- Mix heavy cream, evaporated milk, and vanilla. Add condensed milk to sweeten it to your taste.
2. Prepare
- Cut the ladyfingers into smaller pieces (about ¾" [2 cm] each). Distribute among 6 - 8 popsicle molds. Pour in the milk mix.
3. Freezing
- Freeze the popsicles until they harden 4 - 6 hours.Unmold before serving.
