Ingredients

12 lime leaves or lemon tree, rinsed (see tips above the recipe)
6 mint leaves
1 star anise (optional)
1 lime or lemon
4 tablespoons Honey (or sugar) to taste

Instructions

1. Boiling

In a deep saucepan (preferably stainless steel) heat 8 cups [2 liters] of water over medium heat until it comes to a gentle boil.
Add the lime leaves, and mint leaves, and star anise. Simmer over very low heat until the water has reduced to half or has a light green color.

2. Serving

Remove from the heat and add the juice of the lime. Remove leaves.
Sweeten with honey to taste (optional).
Serve hot.
