Ingredients
For the crepes
1cupof all-purpose flour
2medium eggs
1 1/2cupof skim milk
1/4teaspoonof baking soda
1tablespoonof butter at room temperature
Filling 1
1/2cucumber, peeled and cut into strips
12slicesof cheese(cheddar or mozzarella)
6slicesof turkey ham
Filling 2
12slicesof cheese(cheddar or mozzarella)
12slicesof turkey ham
1/2carrot cut into thin strips
1/2cupof diced tomato
1/2cucumber cut into thin strips
12lettuce leaves
Instructions
For the crepes
Sift flour, mix with eggs, milk and baking soda. Whisk until there's no clumps.
Paint a large non-stick skillet with butter. Heat over low heat.
Pour 1/4 cup of the flour mix and spread on the bottom
Cook for 30 seconds. Flip carefully and cook for another 30 seconds. Flip again and cook until it has golden spots.
Remove from the pan and repeat with the rest of the flour mix.
Filling 1
Top one crepe with cheese and ham, add some cucumber sticks and roll tightly.
Repeat with the rest of the crepes.
Cut into thirds and pack for school or work.
Filling 2
Top one crepe with cheese, lettuce and ham.
Add some cucumber sticks, carrot sticks and tomatoes and roll tightly.
Repeat with the rest of the crepes.
Cut into halves, wrap in waxed paper, and pack for school or work.
