In a mixing bowl, combine eggs, milk, and salt and pepper.Add in flour to the eggs and whisk until it is well mixed and whisk to mix well
2. Cook the vegetables
In a frying pan heat up the oil.Cook and stir the onion until it becomes translucent. Add peppers, tomato, and olives and cook until they have heated through. Arrange the vegetables to cover the bottom of the pan. Pour in the batter.
3. Cook egg batter
Lower the heat to very low and cover with a tight-fitting lid.Cook until eggs set, about 10-15 minutes. Check with a knife or toothpick for doneness by poking in the center.
4. Serve
Remove from the heat and flip onto a large plate or tray.See serving suggestions above the recipe.

If you add more vegetables, add the longer-cooking vegetables first so the other ones don’t overcook.
