Camarones al Ajillo or Al Mojo de Ajo [Video+Recipe] Garlic Shrimp

Camarones al ajillo or Camarones al mojo de ajo is a simple garlic shrimp dish that reminds me of trips to faraway coastal towns, restaurants overlooking the beach and lazy afternoons.

4 cloves garlic thinly sliced
1½ teaspoons salt divided (or more, to taste)
2 red bell peppers diced

Cilantro or parsley leaves for garnish (optional)

In a large skillet, heat the olive oil over medium-low heat.

Add the garlic and a teaspoon of salt. Sauté, stirring, until the garlic begins to release its aroma (about 1 minute).

3. Cook the shrimp

Add the shrimp and cook (stirring occasionally) until they turn pink.
Taste and season with salt to taste if needed.

4. Serve

Remove from heat and garnish with a few leaves of cilantro or parsley (optional).
