Grease a baking tray. Pre-heat oven to 300 °F (145 ºC).
2. Mix dry ingredients
Sift baking soda, cinnamon, salt, and flour together, set aside.
3. Make cookies
Combine sugar and butter in the stand mixer bowl, and beat at low speed until the butter acquires a light color.Add eggs, one by one, while beating continuously. Remove from the mixer. Fold in the coconut with a spatula, followed by the flour.Two spoonfuls at a time, make little mounds of the dough on the baking tray.
4. Bake cookies
Bake until they turn golden brown (check at the 15 min mark).Cool to room temperature before serving.
