How to make Conconetes

Learn how to make Dominican coconetes - these humble, rustic, easy to make coconut cookies, that we love so much.

– butter (salted), or unsalted, for greasing baking tray – ½ teaspoon baking soda – ½ teaspoon cinnamon powder – ¼ teaspoon salt – 1½ cup all-purpose flour – 1 cup brown sugar – ⅓ cup butter (salted), room-temperature (½ stick) – 2 egg (medium) – 1¼ cup coarsely grated coconut

Ingredients:

Mix dry ingredients:

Sift baking soda, cinnamon, salt, and flour together, set aside.

Make cookies:

Combine sugar and butter in the stand mixer bowl, and beat at low speed until the butter acquires a light color. Add eggs, one by one, while beating continuously. Remove from the mixer. Fold in the coconut with a spatula, followed by the flour. Two spoonfuls at a time, make little mounds of the dough on the baking tray.

Bake cookies:

Bake until they turn golden brown (check at the 15 min mark). Cool to room temperature before serving.
