Instructions
1. Cut tips
Cut the ends on both sides and discard.
2. Cut into smaller pieces
Cut into smaller pieces that will be easier to peel (about 2" [5 cm]).
3. Score peel
Score both the thin brown skin --as well as the thicker pink peel underneath-- with the tip of the paring knife.
4. Remove peel
Pull off the peel which should easily come off.
5. Wash
Wash the yuca pieces in running water before cooking.
