Ingredients
Pre-prepared sauce
1 1/2cupof World Harlbors Lemon Pepper and Garlic Sauce
3tablespoonsof olive oil
1/2a cup of water
1 1/2teaspoonof salt
1/2teaspoonof pepper
Homemade sauce
1/2cupof lemon juice
1/4cupof brown sugar
1/2cupof water
1tablespoonof garlic powder
1teaspoonof ketchup
3tablespoonsof olive oil
For the chicken
6chicken legs, skinned, cleaned of fat and divided into halves
6cupsof sweet potatoes, cut into cubes
3large carrots, sliced
2cupsof pineapple, cut into cubes
Instructions
For the sauce
Mix all the sauce ingredients (use either prepared sauce, or homemade, NOT both). Heat over low heat until it breaks a boil. Remove from the heat and cool to room temperature.
How to make the chicken
Place the chicken legs in a zippy back and add the sauce mix, moving around until the meat is coated with the sauce. Marinate for at least two hours in the fridge.
Heat the oven to 350 ºC [180 ºC].
Place the sweet potatoes, carrots and pineapple in a baking pan. Put the chicken legs on top of it and drizzle everything with the sauce in which the chicken marinated.
Roast for 30 minutes or until the chicken is golden brown.
