1½poundSmoked pork chops [0.7 kg] cubed and bones removed
Heat the oil over medium heat in a cast iron skillet or heavy-bottomed pan. Add the pork chop cubes, and cook and stir until they brown.
2. Cook the vegetables
Add the onion and cook and stir until the onions become translucent. Add the bell pepper, and cook and stir for a minute. Add the tomatoes and lower the heat. Simmer until the tomatoes soften. Stir in the parsley. Season with salt and pepper to taste.
