Ingredients
½poundGouda cheese
½york ham
A sprig of fresh dill(optional)
½stick of butter, soft
4slicessandwich bread
4small cucumbers, sliced very thinly (see notes)
Instructions
Making the sandwiches: Mix cheese, ham, dill and half of the butter in the food processor until it turns into a smooth paste. Spread evenly on 4 slices of bread. Place half of the cucumber slices on the cheese and ham paste. Butter the other four slices of bread, and place on the cucumbers, butter side down. Butter the top of each sandwich and cover with the remaining cucumber.
Chilling: Place the sandwiches on a tray, wrap in plastic film and chill for an hour, or until it's time to serve.
Serving: Once it's time to serve, carefully cut the crust and cut each sandwich into 4 triangles. Serve chilled. This is perfect with the afternoon coffee, or even a glass of wine.
Notes
To get the super-thin slices of cucumber I used a potato peeler.
