    Chicken, sweet potato, carrot, and my magical garlic and lemon sauce. This is a very flexible dish, so you can use chicken breast in lieu of thighs, and add more vegetables (like broccoli, for example, if you so wish.

    Why it's so good

    The lemon and garlic sauce is a surprising combination of sweet, sour, and tangy that's also easy and quick to make. The chicken is marinated in it, and the vegetables bathe in the released chicken broth and sauce absorbing all the flavors. 

    If you feel particularly adventurous, add some chunks of fresh pineapple to your vegetable mix. Yes, it tastes divine.

    This chicken with lemon and garlic sauce recipe is a combination of sweet, sour, and the kick of freshly ground pepper in a tender, fall-off-the-bone chicken.

    Ingredients

    Pre-prepared sauce

    • 1 cup World Harbors Lemon Pepper and Garlic Sauce
    • 1½ teaspoon salt
    • ½ teaspoon pepper (freshly-cracked, or ground)

    Homemade sauce

    • ½ cup lemon juice, (or ¼ cup lime juice + ¼ cup of orange juice)
    • 2 tablespoons brown sugar
    • 2 tablespoons garlic powder
    • ¼ cup ketchup
    • 1 tablespoon salt
    • 1 tablespoon pepper (freshly-cracked, or ground)

    For the chicken casserole

    • 1 large white onion, cut into cubes
    • 2 bell pepper, cut into cubes
    • 6 chicken thighs, divided into halves, or 12 drumsticks
    • 2 cups batata (sweet potato), cut into cubes
    • 2 cups carrot, cut into cubes

    Instructions
     

    • Mixing sauce
      Making the sauce: Mix all the sauce ingredients (use either prepared sauce, or homemade, NOT both).
    • Seasoning the chicken
      Season the chicken: Place the chicken legs in a bowl and stir in the onion and bell pepper.
      Add the sauce mixture, moving around until the meat is coated with the sauce.
      Cover and marinate for at least two hours in the fridge.
    • Chicken ready for roasting
      Cooking: Heat the oven to medium-high heat (350 ºC [180 ºC]).
      Place the sweet potatoes and carrot in a baking pan. Put the chicken legs (and onion and bell pepper) on top of the vegetables, and drizzle everything with the sauce in which the chicken marinated.
      Roast for 30 minutes or until the chicken is cooked through and light golden.
    • Serving the chicken
      Serving: Remove from the heat and serve.
