Rice - Pasta - Tubers - Bread

Rice is the staple of the Dominican diet. It is served practically every day on our tables. When you cook the rice there will be some that will stick to the pot. We call this hardened rice concón,and it is considered a delicacy.

Recipe Espaguetis (Spaghetti a la Dominicana)


This recipe would probably, cause the Italian Pasta Mafia to go "Soprano mode". Dominicans (most) like their pasta softer than al dente... and well, remember what Aunt Jane already wrote about this recipe? We still think that it is worth a try, so did Aunt Jane.

Time: 35 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: No prior preparation is necessary.

Ingredients:
  • 1 lb of spaghetti
  • 1/4 lb. of salami diced into small cubes (optional)
  • 1/4 cup of ground parmesan cheese (optional)
  • 1 tablespoon of capers (optional)
  • 2 tablespoons of olive oil
  • 1 large green bell pepper cut into small cubes
  • 4 plum tomatoes cut into small cubes
  • 4 tablespoons of tomato paste
  • 1 large onion sliced finely
  • 1/4 teaspoon of ground black pepper
  • 1 pinch of oregano
  • 1/2 tablespoon of mashed garlic
  • 1/4 teaspoon of vinegar
  • 1/2 cup of evaporated milk (optional)
  • Salt

Preparation:
  1. Boil the spaghetti until slightly softer than al dente having added a teaspoon of salt to the water. Drain the water and reserve. Heat a tablespoon of oil in a pan. Sautee the salami until it turns golden brown on the outside. Add the the onions, pepper, garlic and capers and let simmer until the vegetables are tender. Add the tomatoes, let simmer until the tomatoes are tender. Add the tomato paste and vinegar. Add the milk and let simmer at low heat until half the liquid evaporates. Add the spaghetti and mix well. Add pepper and oregano and adjust salt to taste. Serve hot. Sprinkle the cheese on top.
  2. Serve with tostones or green salad.

I cooked this on my own following your instructions, and my husband served himself 3 times!! I have to say this was one dish I was proud of! Thank You!!

omg this reminds me of when i was lil!!! were dominicans that used to live in NY and my 4 older brothers used to gobble it all down. thanks for posting this up now i can make it for myself and my dominican husband ;]

I'm in my bf's mom's house and there's no bell peppers at all. Is it ok if I cook it without the bell peppers?
