Rice - Pasta - Tubers - Bread

Rice is the staple of the Dominican diet. It is served practically every day on our tables. When you cook the rice there will be some that will stick to the pot. We call this hardened rice concón,and it is considered a delicacy.

Recipe Arroz con maíz (Rice and sweet corn)


Arroz con maíz is usually prepared the same as arroz blanco to which you add sweet corn. You may do it that way if you wish, but here we present you with different recipe that also combines pineapple, making it original, tropical and downright fantastic. We suggest you serve it with pollo guisado.

Time: 35 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: No prior preparation is necessary.

Ingredients:
  • 4 cup of rice
  • 1/2 cup of sweet corn
  • 1 cube of vegetable or chicken stock
  • 1/2 cup of pineapple cut into small cubes (optional)
  • 5 cups water of boiling water
  • 5 spoons of oil
  • Salt

Preparation:
  1. Heat 3 tablespoons of oil, add the corn, chicken or vegetable stock and pineapple and stir until the chicken stock has dissolved. Add the rice and mix well. When everything is well mixed add the boiling water. Adjust salt to taste.
  2. Stir regularly to avoid excessive sticking. When all the water has evaporated cover with a tight fitting lid and simmer on very low heat. Wait 15 minutes and uncover. Stir, add the remaining oil and cover again. Wait another 5 minutes. Try the rice, it should be firm but tender inside.
  3. If necessary, cover and leave another 5 minutes on very low heat.

i love arroz con maiz! my mom never did it with pineapples, which is my 2nd favorite fruit. I will have to try this version tonight!

I love this dish and so does my 2 year old! It's ez and fast, I actually add sazon to give the rice that yellow rice color and a few pieces of cilantro for a better taste. That's how my aunt does it.
