Rice - Pasta - Tubers - Bread

Rice is the staple of the Dominican diet. It is served practically every day on our tables. When you cook the rice there will be some that will stick to the pot. We call this hardened rice concón,and it is considered a delicacy.

Recipe Locrio de arenque (Rice and smoked herrings)


A delicious mixture of two ingredients arrived from faraway lands that have been combined into a well-known dish of our Dominican cuisine. Although it was originally a humble dish, this is not the case anymore. Its strong and exotic flavors will keep you coming for more.

Difficulty: Medium
Serve: 4 people

Before starting to cook: Soak the herrings overnight.

Ingredients:
  • 2 lbs of smoked herrings
  • 4 cups of rice
  • 4 cups of water
  • 5 tablespoons oil
  • 4 tablespoons tomato paste
  • 1/4 cup chopped red peppers
  • 1/4 cup of capers (optional)
  • 1 teaspoon mashed garlic
  • 1/4 cup chopped celery
  • 1 spoon finely chopped parsley (optional)
  • Salt

Preparation:
  1. Boil the herrings in the same water that it had been soaking until it starts to come apart. Let it cool down. Get rid of bones and skin. Reserve the water (complete 6 cups adding fresh water if necessary).
  2. In an iron pot heat the oil (reserve 2 tablespoons of oil), add the herbs, spices, tomato paste, peppers, capers and garlic. Sautee for a minute and add the herrings. Add the water that you had reserved and bring to a boil, adjust salt to taste.
  3. When it breaks a boil add the rice. Stir regularly to avoid excessive sticking. When all the liquid has evaporated, cover with a tight fitting lid and simmer at very low heat. Wait 15 minutes and uncover, stir, add the remaining oil and cover again. Wait another 5 minutes. Try the rice, it should be firm but tender inside. If necessary, cover and leave another 5 minutes on very low heat.

I love that smoky smell and flavor of arenque. my boyfriends mother makes this great now I will have to try too.

I added the salty water that the arenque soaked in and the meal came out very salty, almost inedible, I didn't even add salt or bouillon cube.

What is smoked herrings is it also known by any other name???? can i get that in my local latin grocery store. Sorry to sound ignorant, just a Mexican here with no clue about dominican language. ^_^
