Rice - Pasta - Tubers - Bread

Rice is the staple of the Dominican diet. It is served practically every day on our tables. When you cook the rice there will be some that will stick to the pot. We call this hardened rice concón,and it is considered a delicacy.

Recipe Chofan (Dominican Chow Fan)


Requested by some of our readers, we have added here the Dominican version of the Chinese Chow Fan, another example of how Dominicans adapted "foreign" dishes to the local taste and products.

Time: 35 Mins
Difficulty: Medium
Serve: 4 people

Before starting to cook: Dice the pork chops into small cubes. Reserve.

Ingredients:
  • 3 cups of rice cooked using our white rice recipe
  • 1 lb. of boneless smoked pork chops
  • 4 tablespoons of soy sauce
  • 1/4 cup of boiled green peas (petit pois)
  • 1/4 cup of boiled sweet corn
  • 1/4 cup of leek diced finely
  • 3 tablespoons of peanut oil (or oil of your preference)
  • Salt

Preparation:
  1. Sautee all the ingredients (except the rice) using the oil. Adjust salt to taste. Add rice to the rest of the ingredients. Mix well, and fluff the rice using a fork. Serve hot.

I did that one today and got cheers from a happy husband. It wasn't so hard. He said that restaurants prepare this dish with the leftovers.
