This little rolls are the quintesential street food: not fully appreciated. But they are, in my humble opinion, one of the best buffet dishes in the Dominican cuisine....

I love yuca! Any tips on how to peel it? I remember eating some of these that we bought premade in the supermarket I think they were called something like bollitas de yuca con queso (so with cheese in) and so would love to make them here. I have found a yuca supplier here in York (UK) at last and use it regularly in casseroles mmmmmmmm!

Over the summer I went to the Dominican Republic and this was, by far, my favorite food over there! I can't wait to try this recipe!
