Post Bean Soup

Dominican Bean Soup

Ingrediants:
2 Tablespoons olive oil
4 cloves garlic
1 medium onion
3 celery stalks
2 carrots
1 medium potato
1/4 cup barley
1 bay leaf
15-ounce cans of beans (up to 5 cans... any beans you can get: pinto, black, kidney etc.)
1 cup corn
2 cups spaghetti sauce (or something similar)
1 teaspoon dried oregano
1 teaspoon dried basil

Procedure:
Heat oil and sauté garlic and onion until onion is translucent. Add celery, carrots, potato, barley, and water.

Simmer 30 minutes.

Add beans, corn, spaghetti sauce, and herbs. Simmer 5 to 10 minutes, then serve.
