Salads are an important part of the Dominican meal. Sometimes instead of (or in addition to) salad Dominicans serve side dishes with their meals . Casseroles (pastelones) are also very popular in Dominican cuisine.

Recipe Pastelón de plátanos amarillos (Ripe plantains casserole)


This recipe, like in many others in Dominican cuisine, combine savoury and sweet flavors. For the filling, you may use vegetables, chicken or beef (or just use cheese).

So do you mix the green pepper, onion, and ground pepper with the meat along with the tomato paste?

Please read the instructions carefully. The tomato paste is added while the meat is cooking.

I did dearest Tia, but it doesn't say what to do with the following ingredients:
  • 1 small red onion diced into small cubes
  • 1 green pepper
  • Black ground pepper

Do you drain the ground beef after cooking or just leave it in the pan and start adding ingredients?

KimNY, you have to let the liquid evaporate.
