I love this salad with corn it really gives it that kick. I'm not a big fan of apples in this salad. Growing up my mom prepared this dish with apples. A friend introduced me to the corn version and I was instantly hooked. A hint to all, please add the vinegar to the onions in a separate container. Allow the onions to sit in the vinegar for about 20 mins., and then drain the onions and add to the salad. You won't regret it.

If you do not mind a little dark color in your salad... add some balsamic vinegar instead of regular white vinegar... YUMMY!
