Salads are an important part of the Dominican meal. Sometimes instead of (or in addition to) salad Dominicans serve side dishes with their meals . Casseroles (pastelones) are also very popular in Dominican cuisine.

Recipe Guineítos (Sauvory unripe bananas)


Guineitos (boiled unripe bananas) are the perfect side dish to any meat and very common at roadside eateries. Nothing like toping some tender guineítos with sauteed onions and peppers to make them even better-tasting.

Time: 35 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: No previous preparation is required

Ingredients:
  • 8 unripe bananas
  • 1 teaspoon of mashed garlic
  • 1 small onion cut into strips
  • 1 medium red pepper cut into strips
  • 2 tablespoons of oil
  • Ground black pepper
  • Salt to taste

Preparation:
  • Peel the bananas and boil them until they are tender. Take them out of the water and let cool down to room temperature. Cut into disks about 1/2-inch thick.
  • In a sauce pan heat the oil and sauté the garlic, onions and pepper. Add ground pepper and salt to taste. Add the bananas and sauté until they are hot. Serve hot.
