Salads are an important part of the Dominican meal. Sometimes instead of (or in addition to) salad Dominicans serve side dishes with their meals . Casseroles (pastelones) are also very popular in Dominican cuisine.

Recipe Molondrones guisados (Stewed okra)


Many people do not like okra. However if cooked correctly it is a delicious dish and a perfect choice for vegetarians. Okra is very popular in Dominican cuisine and are served either as main dish when no meat is served, or as side dish alongside the traditional Dominican fare.

Time: 50 Mins
Difficulty: Medium
Serve: 6 people

Before starting to cook: No prior preparation is necessary.


Ingredients:
  • 4 cups of okra diced into 1-inch pieces.
  • 2 tablespoons of oil
  • 1 large green bell pepper cut into small cubes
  • 4 plum tomatoes cut into small cubes
  • 2 tablespoons of tomato paste
  • 1 large onion sliced finely
  • 1/4 teaspoon of ground black pepper
  • 1/2 tablespoon of mashed garlic
  • 1/2 teaspoon of fruit vinegar
  • Salt

Preparation:
  1. Heat a tablespoon of oil in a shallow pan. Sautee the onions, add the pepper, tomatoes, garlic and vinegar. Add the okra and the black pepper. Let simmer till the okra is tender, add water when necessary. Adjust salt to taste.
