Recipe Fritos maduros (Fried ripe plantains)


There can't be in the Dominican cuisine any other dish that combines so well simplicity of preparation, popularity and exotic flavor. Fritos maduros is one of our most popular side dishes and one you should try to prepare even if you are a beginner cook.

Time: 15 Mins
Difficulty: Easy
Serve: 4 people

Before starting to cook: Peel the plantains and cut diagonally in 1/4- inch thick slices.

Ingredients:
  • 2 ripe plantains
  • 1/2 cup of oil
  • A pinch of salt (may be omitted)

Preparation:

  1. Deep fry the plantains until golden brown. Sprinkle a little salt if you so desire. Serve immediately.

Maduro lovers?

I for one, love maduros. I think we should post a survey to see which people prefer more, tostones or maduros. I know who I would vote for!

Unhappy Just Not Right.

i love maduros, but i can never seem to cook them right. is there a specific oil i should use? i try with vegetable oil, and they always come out too crunchy, or just not good at all .. any suggestions?

The plantains need to be really ripe. You know they are really ripe because they are not firm to the touch and because the peel has started to blacken.
