Post Sophisticated blue cheese salad

Ok. So it is sophisticated in my opinion. This is one of those dishes that you will either hate or love. No middle grounds.

In my own home my husband won't try it and my salad-loving kid spat it out. But if your tastes are as sophisticated as yours truly, and nothing like those philistines I call my family, you will also love the contrast of textures, flavors and colors in this dish.

Ingredients (4 ppl):
  • 1 small head of lettuce
  • 1/4 cup of unsalted peanuts
  • 4 cherry tomatoes, cut into quarters
  • 1 apple, diced
  • 1 cup of blue cheese, crumbled
  • 1 tablespoon of extra-virgin olive oil

Preparation:
  1. Cut the lettuce into strips. Mix all the ingredients and serve chilled.

This is a great salad that you can get really creative with... Substitute almonds or walnuts for the peanuts, substitute pear for the apple... You can also use raspberries instead of tomatoes! Delicioso!

I buy Danish blue cheese, but I have been known to substitute other aged cheese for blue cheese in a pinch.
