Recipe Pollo con wasakaka (Roasted chicken with seasoning)


This recipe has been requested repeatedly by our readers. It is not a dish that people prepare at home in the Dominican Republic, it actually is the flagship dish of a popular chain of restaurants. Their recipe is obviously unknown but we can make an educated guess to its ingredients and preparation. The chicken is prepared over coal fire, in this recipe we'll present you with an option that can be prepared using a regular oven. The wasakaka is a watery sauce used to moist the chicken.

Difficulty: Advanced
Serve: 4 people

Before you start to cook: Pre-heat the oven at medium fire.

Ingredients:
  • 1 chicken (about 3 lbs)
  • A pinch of oregano
  • Salt
    ~For the wasakaka
  • 1/2 cup of water
  • 1 small onion
  • 1/4 teaspoons of mashed garlic
  • 1 teaspoon of salt
  • 1 teaspoon of lemon juice

Preparation:
  1. Sprinkle chicken with salt and oregano. Bake at medium temperature for 40 minutes. Turn oven at high heat the last five minutes. Chicken should be dark golden.
  2. Blend the ingredients for the wasakaka until they are well mixed. Adjust salt to taste. Serve with boiled yuca (cassava).

Is this the same as Pollo al Horno?!

Okay, is this recipe the same as "Pollo al Horno" or different?! If it's different could you or someone please tell me the trick to making Pollo al Horno to perfection. I've tried several times different ways including the recipe listed above, as well as, even boiling the chicken prior to baking to keep it extra tender and juicy inside, but it never seems to come out quite right. Please, tell me the secret or best way to make Pollo al Horno!

ok, "medium heat" how many degress is that? my oven goes by degress.

When I went to the wasakaka place in DR I asked them what was the ingredients in the sauce and the lady said that it included the following:
-Mashed or Minced garlic
-Chopped onions
-Lemon juice
-Bitter Orange (Narangja Agria)

She said the Narangja Agria was the key ingrdient in the sauce...
Mmmm it was yummy!

Hello everyone...I'm new here, but not new to cooking...I made this recipe last night and it was delicious.

I will tweak the wasakaka sauce in the future though..too much oniony aftertaste for my liking....lol
