pernil al horno roasted pork shoulder

1 pork shoulder ( about 5 pds)
3 garlic cloves, smashed
1 tablespoon oregano
5 tablespoon salt
1 tablespoon ground black pepper
3 tablespoons extra-virgin olive oil


placxe the pork, fat-side up, in a roasting pan. using a sharp knife make small cuts on the meat. mash the garlic, oregano, salt,pepper, and oil into a paste. rub garlic paste all over the pork, being sure to get in the cuts you made. so the salt can penetrate the meat and pull out the mositure. cover the pork with plastic wrap and let ot marinate int the refrigerator overnight.


preheat oven to 350

roast pork for about 2 1/2 hours, or 30 mins per pound:

let rest for 10 mins before slicing.

pernil al horno

to get the fat crispy, just sear of fry the meat at a high temperature quickly on all sides, just till all sides are brown including fat especially, this will make it crispy and just perfect in side after you bake it as regular. so fry outside, then bake!

Thank you. At what tempature to fry & for how long. I tried baking and hoping it would get crispy automatically , but that did not work .
