| Chicken Adobo 1 kilo chicken, sliced to serving portions 1/2 cup vinegar 1/2 cup soy sauce 1/4 tsp. pepper, coarsely ground 1 small bay leaf (optional) 2 cloves garlic, crushed 3 tbsps. cooking oil Combine all ingredients in a bowl. Marinate for 30 minutes. Transfer to a pan, cover and simmer until chicken is tender. Drain and set sauce aside. Fry chicken pieces in a heated skillet with oil until brown.
