Question cooking for 6th grade classroom

Please help my son has a project due by next Monday. And he needs to prepare a traditional meal for his classmates there are 25 people in his class. And I don't have any idea where to start.

I think the best dish for this many people is 'Moro de habichela rojas' Red beans and rice already mixed in. I believe Aunt clara has a recepe for it. Very easy to make and transport.
