Recipe for Dominican longanisa

In our area of New Hampshire ethnic products are hard to find, so we make most items ourselves. I make my own sausage but can not find a recipe for longanisa, any help?

People don't usually make longanizas, just buy them from the store. I really can't help you here, but if you speak Spanish head over to the Spanish forum (no need to register again, use the same username and password), I think we might have discussed that there.

Dominican longanisa

Dominican longanisa is different from Spanish or Mexican or Phillipino. It is tyhis taste that I'm looking for. The ingrediants must be some what different. Does any one have a conection, relative,in the DR that might know what is in them?

Longaniza

Hello Kmidas, I lived in Lawrence, MA and I know the have dominican market in the city, maybe you could go there to buy what you need. I ask my mother she said that you can make them, you need to get the pork casings from a bucher shop, longaniza is not cook is air dry. They are hang in a drafty and dry area.

I got this recipe:

2lb of lean pork ( butt or ham)
salt
sour orange juice
lime juice
dominican oregano
sofrito ( with a lot of garlic

The meat should be ground but not so fine, mix well with everything and only if absolutely necessary add water to make the mixture feel guey. The sausage will be air dried and you want to eliminate moisture an not add to it.
Stuff into thin hog casings. Hang in a drafty and dry area where the air circulates.

Go to the Internet and find Arnolds's Meats Inc at: arnolds-sausage.com, they make an excellent Longaniza, actually better that what I could find back home last few years.

I finally tried Icelsa Mejia's recipe for longanisa. The taste is not quite right, since there were no amounts and I quessed, I'll now try to adjust the amounts. I'll put the recipe up with the amounts I come up with, when I get it so I'm happy with the result. In the mean time if any one has another recipe or ideas let me know. ( they tasted pretty good with mangu and eggs ) kmidas
