Recipe for Dominican longanisa

My recipe:
1 Lb "choped" Pork, it needs some fat, choped not ground, if using meat grinder use the disc with the largest holes.
2 Coles of Garlic
2 ajicitos gustosos ( aji dulce, aji de gallina, cachucha)
1/4 Teaspoon Black Pepper
1 Tablespoon Bitter Orange or Half and Half Lime and Orange Juice
1/2 Teaspoon Dominican Oregano.
Mix well and let marinate overnight before making the Longaniza.
