Dominican create their own shelf life rules

Okay, so maybe its just me, but does anyone find it interesting how us Dominicans make our own rules about how long you can keep foods?! I mean, my mom's theory is as long as its frozen its good and will last. We make extra of everything and freeze everything!

Mashed garlic-Freeze
Pre-Boiled Beans-Freeze
Sofrito-Freeze
Salami-Good forever as long as its in the freezer
Queso de freir-Same story
Meats-who know's how long we've had that pernil in there???
Leftover tomato paste-Freeze

Man, it seems like we dont follow expiration date guidlines. My mom's freezer and pantry is FULL of stuff. I worry sometimes, but when the things get cooked, theyre sooo good. LOL. Maybe its just me.

No, it's not only your mom. I swear that my mom has some mammoth meat frozen in that cave she calls freezer.

Luckily she hasn't killed anyone. Yet.

I totally AGREE!

I am no expert in Dominican culture but I have to agree wtih you - my boyfriend's mom (they're from Santo Domingo) disregards ALL rules on refrigeration, expiration dates, etc. If it's in the refrigerator it must be ok. If it's in the freezer, even better! And forget about sauces, mayonaisse, etc. being kept in the fridge - it ALL goes into the pantry - most of the time I can't even eat it!!!!!! Nevertheless, her food is ALWAYS amazing and I am usually the first to go back for seconds!

Oh by the way. I noticed I have some frozen boiled beans in my freezer that have been there for two months. Guess what's for lunch tomorrow?

It must be genetic.

It's a dominican thing.

This make me laugh because all dominicans do keep everything in the freezer, is the only way to make the foods evryone like so much.

LMAO sounds like my aunt's freezer, with the pre-boiled beans and pre-seasoned chicken. But it's true. The food is GOOOOD at my aunt's!
